She was going on three back then. Not only did she catch them, she ate them. Doesn't eat fish nowadays. Funny how taste buds change.

That one I think we sashimi-ed with some wasabi and Nip soy. Lovely: straight from lake to frige (to firm up) to mouth.

I could go some now...

Dumb question, I suppose, but sashimi in a Japanese restaurant is the raw fish,right? Did you have to prepare it before serving, Michael, or is it just 'cut-wash-serve'?

Hi Dylan.

It is never 'cut-wash-serve' - well at least the way I do it.

Head goes off, the tail and then (not to go through the whole process) the bones are removed. This, with trout, can be done: you wind up holding the entire backbone, ribcage and "hairbones" as a unit.

A good sharp knife is run between the skin and flesh (against a cutting board) and the resultant fillet placed in the fridge for an hour or more to "firm".

Slice- thinly - and serve raw with wasabi (a must) and Jap soy. Maaaaarrrrvellous.

Sounds good. I figured the deboning would be involved but wasn't sure on whether it would need to be washed or anything. The wife is a big fan of sushi and sashimi but we've never made it with a 'real' fish as opposed to imitation crab or something like that. Thanks for the info.

(...and I can't use the word 'deboning' without recalling that it means the same as 'boning'. it's one of those flammable and inflammable things, I guess.)

Aawww sheesh, you can't top toddlers or animals.

Toddlers with animals (even dead ones) is an unfair blogging tactic.

Actually Caz, it was still kicking (hard to tell I know). Hence Caitlin's "Step over fin" strangle hold....
